Today I planted another cacao tree. We also finished conching a 7.5 lb batch of 70% dark chocolate. This batch turned out surprisingly good and it’s very fruity. 7.5 lbs. is the most we can make at one time with the tiny chocolate grinder we have. Tomorrow we will run the tempering machine for the first time.
