Today I planted a Voa vanga or Spanish tamarind tree that I got from Joe. It’s not really from Spain and it isn’t a tamarind, it’s a tree from Africa that makes large orange fruits People in Vanuatu and Fiji often plant these trees in their gardens. It’s a beautiful looking tree with glossy leaves so I planted it near the house.
Today is day three of fermentation. The pulp is starting to melt away. I ‘turned’ the beans to give it some oxygen and I can smell more alcohol coming off of it. It’s now time to keep the lid slightly open to allow the aerobic bacteria to do their thing. It’s snowing on Mauna Kea too so I gave the beans a banana leaf blanket to keep them warm.
