Today I planted a rare salacia species called Fruta do Caramelo. It looks like and peels like an orange but the inside is totally different. This is another ultra rare tree that came from Joe. I’m not surprised that there is zero info on this fruit on the internet, but other salacias tend to grow into a bush or a small tree. The fruit is supposed to taste like caramel which means that I can cover it in chocolate! I can’t wait to try it.
I designed prototype labels for the chocolate bars. We are officially called HA’A CHOCOLATE, and ha’a means humble in Hawaiian. The name reflects our small farm and how we grow cacao on a small scale, how we produce chocolate in small batches.

Phillip is officially our first chocolate customer. I think he is hooked on the milk chocolate. Here he is with our big boy size 7 oz. chocolate bar! Phillip and Majidah are going to do some R&D in cocoa butter pressing.
